Omelette with asparagus
This omelette with asparagus makes a very good breakfast dish and dinner dish. A perfect low carb dish that is super healthy and filling.
Here is the recipe and how to make this delicious omelette:
6 eggs
0.5 yellow onion
1 Garlic clove
200g asparagus
125g mozzarella
2 tbs basil
Salt
Pepper
1 tbs butter
Mix the eggs with a little salt and pepper
Chop the onion and garlic in small pieces
Add a little olive oil into a frying pan and cook the onion and garlic for about 2-3 minutes
Add the asparagus with the onion and garlic and let it cook for about 2 minutes
Add the eggs into the frying pan, and stir lightly to mix it all together in the pan
Add the mozzarella to the top and put a lid on top to let it settle and for the mozzarella to melt on top of the omelette. The dish is ready when the omelett is firm.
