Omelette with asparagus

This omelette with asparagus makes a very good breakfast dish and dinner dish. A perfect low carb dish that is super healthy and filling.


Here is the recipe and how to make this delicious omelette:

Ingredients:
  • 6 eggs 

  • 0.5 yellow onion

  • 1 Garlic clove

  • 200g asparagus

  • 125g mozzarella

  • 2 tbs basil

  • Salt 

  • Pepper

  • 1 tbs butter


How to make it: 
  1. Mix the eggs with a little salt and pepper

  2. Chop the onion and garlic in small pieces

  3. Add a little olive oil into a frying pan and cook the onion and garlic for about 2-3 minutes

  4. Add the asparagus with the onion and garlic and let it cook for about 2 minutes

  5. Add the eggs into the frying pan, and stir lightly to mix it all together in the pan

  6. Add the mozzarella to the top and put a lid on top to let it settle and for the mozzarella to melt on top of the omelette. The dish is ready when the omelett is firm.

  7. Enjoy!
