Cellery root soup with apple and chicken
Make an incredible tasty fall soup with cellery root and apple. Apple and cellery root makes for a flavorful combination, the sweet and savory flavor of the apple balances the earthy taste of the cellery root. In this recipe we are topping the soup with chicken, hasselnut, and more apples. Serve with a piece of bread or two if you want to.
Ingredients
1 onion, cut in small pieces
2 tbs olive oil for cooking
200 g cellery root, cut in small squares
2 apples , cut in small squares
1 tbs thyme, dried or freshs
8 dl chicken or vegetable broth
Salt
Pepper
Topping
300 g chicken filet kyllingfilet
2 tbs hasselnut, chopped
1 apples, cut in small squares
What to do

Cook the onion in a warm pot with oil.

Add cellery root, apple and thyme, cook for another 5 minutes. Keep stirring to make sure it doesn’t burn.

Pour the chicken or vegetable broth. Boil soup at midle heat, until vegetables are soft, about 15-20 minutes.

Remove the pot from the stove and mix the soup with a stand mixer or a food processor. Add salt and pepper for your preference.

Topping: cut the chicken into smaller pieces, spice it up with salt and pepper. Cook in butter or oil until fully cooked.

Pour soup in to deep bowls and topp with chicken, hasselnut, and apple pieces.
